Making caramels
Shirley's Wonderful Caramels. A recipe I have used for many years. I usually make at least one batch each Christmas, and have been known to do as many as four. It requires cooking and stirring constantly for about an hour to bring them to the proper temperature, then pouring them out and letting them age for 24 hours before cutting and wrapping. A bit of work, but well worth it, and a wonderful treat. They literally melt in your mouth.
