Toad in the hole

American version. I know there are many versions of this favorite and this is definitely not the British version. Ours is a piece of bread, whole wheat in this case, buttered and toasted on both sides, with a hole cut in the middle and an egg fried in the hole. Some folks put a slice of cheese on top of the egg and put the hole from the center of the bread on top of the cheese. Once in a while I get in the mood for one. Tonight was the night.
