How to make gomasio (sesame seed salt)

Toast sesame seeds in a large skillet over medium heat until lightly toasted, shaking the pan often. As soon as seeds are fragrant and lightly browned, transfer them to a large plate lined with a paper towel. Let cool. Add cooled sesame seeds to a mortar and pestle and pound with rock salt until well mixed. Store in an airtight jar.
