Or grain. Today's sourdough effort -- these are the best holes yet! A mixture of 80% organic T80 flour and 20% spelt if you're interested -- I really like the flavour of spelt, but used alone it tends not to rise very well. Bread is an 18-hour project but I have a system now; it just requires a little planning.

I remembered today why I don't use exposure compensation. For some reason I set it to -0.7 yesterday and forgot about it. Result, some very dark photos today -- thank goodness for raw files!
