The therapeutic act of marmalade making is over until April when blood oranges will be on the market - I've kept a couple of Sevilles back to add a bit of bitterness...

In this last batch for one third of the sugar, I used dark "cassonade"...

So far as I can tell it seems to be a great success!

The extra gives you the "boil off"...
