The Citrus Cupcakes...
Well here's the result of my baking yesterday and they are deliciously light and tangy. It's the frosting that's tangy - made with freshly squeezed lemon juice, lime juice, and orange juice, coconut milk, rice syrup, maple syrup, and agar agar. I wasn't over keen on the frosting yesterday, but today it's delicious so it must have needed time to settle. The cake part is so light and coconutty it's delicious. It's got a boiled valencia orange blended into the mixture. I wasn't sure about how these would turn out, but overall I'm very pleased with them!
