Beer Brewing Manual
This wonderfully produced book is tucked away in a small cabinet in our apartment. It was published in 1948, by the Ecole de Brasserie in Nancy (in the Champagne region of France, ironically). As the cover (and the title page) proudly proclaim, its two authors are professors at the Brewery School. Its coat of arms is in the upper left; the other items (among a dozen similar ones at the end of the book) appear to be publicity material for brewing-related companies. There are photos and above all diagrams on most of the 200 pages. What a find!
