Rearrangement

I decided to rearrange the flowers given to me by my son James on my Birthday as some were worse for wear.
The Rose buds & Gerbera were no more at their best.
While sorting them out I noticed something strange; there were little buds growing out of leaves! See extra's, I don't understand how this happens & why? Please if you know why & what plant it is, tell me. Thanks
