Saturday after dinner treat
The cake has been approved by my Friday evening and Saturday afternoon colleagues.
The original recipe is in Dutch. This is the translation:
Ingredients:
250 gram ricotta
150 gram soft butter at room temperature
150 gram selfraising flour
150 gram sugar (granulated)
3 large eggs
100 gram blueberries (fresh or frozen, I used fresh, you can substitute for other fruit)
pinch of salt
Mix butter, ricotta and sugar until creamy.
Add and mix eggs one by one until completely incorporated.
Maybe the mixture looks a bit shifted, not to worry.
Add the salt and the flour bit by bit until there's a smooth batter
Put the batter in the mould. Put the berries on top, slightly pushing them in.
Bake the cake in an oven (preheated at 160 Celsius) in about 45 minutes.
I have a microwave oven and the second and third time I made this cake I set the temperature at 180 degrees. The first time it took ages for the cake to get done.
