Creole Chicken Casserole

Enjoyed putting this together for supper tonight. It tasted just great.

The Creole descendants of European colonists in Latin America have developed a distinctive and very flavoursome style of cooking. Tomatoes, green peppers and rice are characteristic ingredients of their recipes - as in this dish. Served with young green peas and a beetroot salad.
