Culturally-displaced cake

On my way home from London, I was given this cake. It claims to be a lamington. Never having had such a thing before, I can't be certain whether it was an accurate representation of the antipodean confection. However, I was struck by the name of the company that made it: Gastro-Culinary Innovation. It seemed odd that putting a traditional Australian cake in a packet for consumption on British trains could be considered innovative. My confusion was compounded when I discovered, via a Twitter conversation, that 'gastro' is the common Australian term for gastroenteritis.
