Uffins!

On a whim, I whipped up a batch of muffins whilst I was waiting for our enchiladas to bake.

Used "Jaz and Juls" hot chocolate with cinnamon and rose, and made some rough choc chips from a bar of dark orange chocolate and a bar of white chocolate. Replaced butter with sunflower oil. They are really light and scrumptious.

Finished my Year 9 reports, which was my final job that had to be done before Thursday. Apart from a couple of tasks that crept out of my email account this afternoon and a query that almost had me panicking that I had dropped a big ball. However, it turned out I hadn't.

So, preparations have begun for Thursday. You don't need the gory details. You are going to get a pile of gory details post op !!!
