Glossy, fragrant, home-grown, Mediterranean lusciousness ready to go into the oven for lunch.

Tomatoes, aubergines, courgettes, onions, peppers, garlic, local olive oil, balsamic vinegar, basil, coriander and wild thyme gently roasted until the flavours melt into one another. A final drizzle of olive oil and some crumbled feta will complete the dish.

I'm off carbohydrates so no bread for me, but who cares?
