Salt cod

My forefathers used to cure cod in this fashion and even as a child I remember seeing cod after being salted drying on the washing lines of neighbours.

My mother used the fish (after soaking it in many waters over 48 hours) to make a dish we called hairy tatties and it's making my mouth water just thinking about that tasty dish. She'd add the cod she had boiled to a vast pan of creamy, buttery mash. It's the fish dish equivalent of corn beef hash I guess.

I'm going to add onion and garlic to my dish and serve it to friends who will appreciate it cos it's not to everyone's palate
