From 'ouch' to 'yum' in easy steps

Three stages in nettle soup:
The growing plant;
The prepped leaves, all stalks and living things removed (use gloves and scissors);
The final result.

Recipe:  soften onion and garlic (could be wild) in butter or oil, followed by a little chopped carrot and celery, then add the nettle leaves, a couple of cut-up potatoes, salt and pepper and some good quality vegetable or chicken stock.  Cook until the potato is done. Blend well and serve with a dollop of cream. 
Do not expect a stinging sensation as it goes down.
