Happy Birthday To My Hubby
Since today was Gilles' birthday and he had put in a request for chocolate cake, I whipped up my family's all-time favorite, the Screwball cake. It is a recipe that I got from my mother and I have been baking it for as long as I can remember.
My children have dubbed this the "Barbie" cake and its been known by that name in our family ever since I baked and decorated it to look like a Barbie doll for my daughter's birthday many years ago.
I did a little bit of research on the recipe and found that, in addition to Screwball and Barbie, it is known by other names as well; most notably "Crazy" or "Wacky" Cake.
This super moist, easy-to-make chocolate cake recipe dates to the Depression era and contains no milk, eggs, or butter. It can be made with gluten-free flour mixes and doesn't even require the use of a mixer!
