Coeur Gourmand Ananas

As I had a late lunch (5 pm!) I really did not feel like eating anything heavy in the evening - especially not a heavy cheese. It just so happened that one of the cheeses in my cheese parcel from the Périgord was this wonderful, soft and creamy goat's cheese that had at its centre pineapple purée. It was like having a dessert, just a bit heavier than a soufflé.
