Thai Beef salad

For my retirement, my colleagues gave me a voucher for Nick Nairn's Cook School at the Lake of Menteith.  We made a weekend of it last month and stayed in a farmhouse B&B nearby. The menu was Thai Street Food, including Tom Yum soup and Thai beef salad with wagyu beef.  It was a lovely evening. Since we had some left over roast beef (from Gosford Farm shop) I tried to re-create it tonight.  It has just about everything in it!
The side story to this is that the B&B had a lot of cows just about ready to give birth, and since the owners wanted to go out one evening, we were left in charge with a number to ring if one of the cows started calfing.  We took our responsibility seriously, and were glued to watching her (she looked enormous) but unfortunately for us, nothing happened.
