As the summer wears on, the flavors of winter beckon. And since they often take a long while to develop, it's perfect they are timed to give the summer's harvest a nice, restful fermentation. Fermented kosher dill pickles are beautiful in the jar, beautiful in the work tiny microbes do for us, and beautiful in the way they taste after just a short time of bubbling away. And the best thing is they don't heat up the kitchen as you're making them!
