Tivoli Cake

Inspired by a dessert I had in Tivoli Gardens last year, this is a buttermilk cake with buttermilk, raspberry and beetroot mousse layers, all wrapped up in toasted vanilla meringue and decorated with raspberries,
vanilla and raspberry meringues and candied beetroot hearts. Early happy birthday cake.
