Is it possible to cook risotto without a wee glass on the side?

With thanks to Granny for being on hand with the littlest so I could relax by the cooker, stirring the rice, drinking the wine and listening to the radio and not have to deal with his usual pre dinner demands of 'me reeeeally hungry, me want some tashios' *






* I once made the mistake of giving him a few pistachios in a dish before tea and he seems to think it is now a necessary aperitif.
