Phở mission

I've been on a mission to find the best phở. There are some dishes where I can easily say my preference and point to specific differences between the versions I've tasted; but phở is difficult. The quality of the meat is the most noticeable factor but the amongst the best broths, I'm not expert enough to appreciate the subtleties.

I love watching the ways people eat their noodle soups. They have their preferences on the garnishes and it's like a ritual. I'm still finding my way.
