Beetroot dip

So very hot today!! We are struggling at 40 degrees while all the news talks about is poor Sydney and their heat wave - hah!
A cool afternoon snack of beetroot dip whipped up in the Thermomix :)
Fresh fruit salad and icecream for dinner tonight...just too hot to even think about anything else.
