Latwerge is a thick plum jam and according to the original old recipes has to be cooked in huge amounts on the oven with stirring for 5 - 12 hours.
I prefer the breadmaker method - stirs and cooks itself in 90 minutes.
No sugar is added to Latwerge, only cinnamon, star anise and cloves in this spice blend.

I like to think it is like using the washer instead of doing your laundry on yesterdays laundry site by the river.

The jars are ready to be filled - it smells very good in here now!
