Happy New Year!
2017 has dawned, and I'm not one for resolutions, but I am going to try and combat waste! To that end, today I used up a load of eggs that were about to go out of date, and lemons left over for Christmas and made lemon curd for the first time ever. I should clarify that the whiteish bits in the photo are unmelted butter rather than curdling egg!
It was an easy all in one recipe and I think it was a success!
