It's had a week hanging in the cold, dry walk-in fridge that we call 'through the back' drying out and having the paste of black pepper and garlic soak into it so it's time to get unwrapped and vacuum packed to live in the fridge having lumps cut off for tea.

In other meat-based excitement, it's only 20g until my salami is ready.
