I spent this afternoon catching up with my cooking course. After last weeks' dodgy dicing I thought I'd better make a bit of an effort! This week was basic cooking methods: blanching, parboiling and oil free sautéing.
The broccoli assignment was to demonstrate different moist cooking methods and the effect on the vegetable. Not sure I fully understand it all but I carefully cut the florets all had to be the same flipping size obviously and cooked A LOT of broccoli!
For dinner I enjoyed Madeira glazed, oil free garlic mushrooms served on a vegan muffin! Not sure it will get me full marks but it was surprisingly delicious and didn't contain broccoli!
