Vegetarians look away now. With iPad to hand, I set about DIY butchery. The YouTube video was quite easy to follow. The cuts are in order from the top: sausage meat trim, diced casserole meat, shanks, medallions, rump steak, topside and silverside (haunch), rolled flank, rolled shoulder, hocks, chump chops, neck fillets and spare ribs. The video had the job done in half an hour. It took me two hours! It should last me the winter.
