Not much time to unwind

Sitting in the relative pre-opening calm of the restaurant - these 20 minutes or so each day are pretty much the only time during the week that I get to relax a bit. Which, in the grand scheme of things, doesn't allow me to do anything. When work becomes your life, you need to learn to appreciate these tiny moments even more.

So give me a few minutes to just lie back and close my eyes....
