these sour dough breads look fabulous and the taste is very good, not too sour. The art in making bread like this is complex, I have spent a few hours with the baker and loved every minute. Today she also made croissants and pain au chocolate and some cinnamon twirls with a coating on top. She is using a slowly slowly approach in developing the range of baking, seems sensible to me. And the extra is her amazing pusscat.
