Ingredients - Apples

We have a Cox's Orange apple tree in the garden, however we've never been able to store them, they either get eaten by mice overwintering in the shed (don't mind that too much) or they simply rot in the damp surroundings - maybe we should just make apple sauce and store them in Kilner jars.
These are at least English apples, though I'm sure there's a hi tech way now of keeping them crunchy.
