Serving pasta.
Today we had a Ladies' Lunch, at a "smart" Italian restaurant, in a neighbouring village......clients on the next table were having pasta.....
The waitress had a large Parmesan cheese 'wheel'; she grated and skimmed fine particles of cheese from the interior of the wheel...
Then ...hot, cooked, pasta was added to the middle of the Parmesan cheese
The waitress swirled the pasta around all the freshly grated cheese....so the pasta became coated with it ......
and the pasta was served....
In all the years that I've been served, and eaten, various types of pasta.....both in Italy...and elsewhere.....I've never seen pasta added to a whole Parmesan cheese, to be coated in this way....
.....a very "smart" style of presentation!?!
