Simnel Cake
I always make a simnel cake at Easter, just as I always make a Christmas one. Does one really need an excuse for a proper fruit cake?!
Seems strange to have a milk carton in the photo, but the BeRo recipe I use calls for 5 tablespoons of milk. And the special joy of a simnel cake is the layer of marzipan in the middle of it, hence the rolling pin.
It had to be in the oven for 3.5 hours so I got lots of other bits and pieces done in the meantime, including taking Ollie and Scratch for a walk, and ploughing through the ironing!
Relaxing gardening time is going to be out of the question for a while as P next door is having thermal cladding put on the outside of his house. Lots of scaffolding, lots of noise, lots of drilling of the stonework and shouting of Romanian workmen! Never mind, it should only take a fortnight, weather permitting! Strangely, hearing folk shouting in a foreign language is nothing like as annoying when you can't understand it!
