But any which way this buckwheat pancake with a circle of melted provolone (I think) folded around a handful of dressed rocket is a winner and YUMMMM!
A  perfect opening to a lunch platter of cured meats, cheeses, olives and artichokes shared with dear friends.

And of course wine...being an Italian family orchard, vineyard and
restaurant... there were Fiamo, Vermentino and Sangiovese to be tasted and enjoyed.
