Spring cupcakes
I've never joined the cupcake craze, mostly because I would be hard pressed to produce 30 cupcakes at a time for birthdays at work (also they are too big - we operate on small helpings, with seconds for the hungry ones). However, I've subscribed to a company that sends you a box every month with a recipe and some of the ingredients and equipment. These were billed as Easter cupcakes, but the box only arrived a couple of days before Easter and we had an open day that weekend, so I didn't get round to making them until today and decided that they could be spring cupcakes instead.
Note from Monday: we had a staff day at work, so there were just seven of us in - they went down very well.
