Let's make salt beef!
We happened to watch Hairy Bikers one evening. They always have yummy stuff and the salt beef they made just looked delectable. Rob was determined to have a go.
You need saltpetre, an essential for all good kitchens and bomb making factories, easily purchased on line. Then add salt, sugar, a few spices and you're good to go. I bought a piece of silverside as it was well marbled, though you can also use brisket.
One week in the fridge brining then a gentle simmer for 3 hours and bingo! salt beef.
I have to say, it was worth the wait, so succulent and tasty, not at all salty.
I have ordered another piece already!
