A Beaufort stew
Or low country boil...on the grill! This was an early Father's Day supper.
Usually we make this by boiling everything in a big pot then add the shrimp at the last minute. This is so much easier! Are you ready for the Ingredients?
For two people
2 ears of corn on the cob, cut in thirds
some tiny red potatoes (I used those tiny fingerling potatoes)
Boil or microwave these until they are just starting to get soft
Cut up a piece of Andouille sausage or your favorite kind, kielbasa would be good
One lemon cut in pieces
One pound of fresh or frozen shrimp
Butter
Spread out a big piece of heavy duty aluminum foil for each packet, or use 2 pieces of regular kind
divide up the ingredients on each foil, sprinkle with salt and pepper or Old Bay seasoning or shrimp boil spices or Cajun spice, or whatever your favorite spice is
Put about 4 tablespoons or pats of butter on the top of each.. I used frozen shrimp so no other liquid was needed but if using fresh add a little water ( or dark beer)
wrap up tightly so no steam escapes. Place on the grill over low heat if using a gas grill or you can bake in the oven at 350. Cook about 20 minutes. It will be scorch your fingers hot when it comes off the grill so be careful. Let it set for a few minutes to cool some! Place the foil packet on a plate and dig in!
Very filling and good! I like the clean up too...fold the foil back up and toss in the garbage! Rinse the plates and forks! Have an after dinner glass of wine!
