Cali girls weekend

One of the things my girlfriend Cindy does extremely well is make pies!  She had received a recipe from her daughter for a tomato pie and wanted to try it out on us.  I'd never heard of tomato pie but we were game!  Soaking red onions and a bunch of fresh herbs and garlic in balsamic vinaigrette for an hour, then layering the mixture with freshly shredded parmesan cheese into a beautiful pie crust had our mouths all watering.  Forty minutes later we savoured and enjoyed this incredibly tasty delight as it found it's way into our very happy tummy's.
