Too many zucchinis?

If you are plagued with more zucchinis than you know what to do with - here is a tasty treat that I learned from our son. 

Slice the zucchini, put a spoonful of your favorite marinara/spaghetti sauce on top with a piece of cheese. He had a kind of cheese called Halloumi that does not melt, and baked this in the oven for about 15 minutes. The cheese is available in our local store, but it was $14 for a small chunk. No way.
 I put the zucchini on a griddle for a few minutes, added the sauce, and when it was done I topped it with a piece of cheddar or swiss. Do this at the last minute and it won't melt all over the pan. 
Fast and easy!
