If life gives you lemons...
...make lemon marmalade, lemon curd, lemon cake, lemon flan, lemon souffle, lemon posset, lemon meringue tart, lemon risotto, lemon dressing, lemons preserved in salt or oil -- oh, and lemonade. If I had the time.
These lemons came out of a skip so we're not allowed to pass them on or give them away. Apart from a few squashy ones they are perfect.
Another day in the world of food waste.
Personal note.
During WW2 lemons were virtually unobtainable. My mother, on a visit from Wales to war-torn London, spotted a small boy sucking a lemon in the street. She collared him and demanded to know where he had obtained it and then she bought the shop's whole supply, maybe a dozen or two, and returned home triumphantly. Shortly after, my father was struck down by a life-threatening illness called leptospirosis. Marooned in an isolated cottage in the hills she tended him single-handed and afterwards always maintained that it was the lemon juice that pulled him through.
It's possible I owe my existence to lemons.
