Scottish Omelette ... in a Spanish Styleee
After my friend pulled out of our few pints and a homemade burger at the Cambridge Bar (Edinburgh) I got on the 22 bus to head home wondering what I was going to rustle up with some pretty empty cupboards.
I devised this Scottish Omelette (with a heavy Spanish influence)!!!
glug of olive oil
salt n pepper (to taste .. hehe)
3 organic eggs
1/2 dozen small new potatoes
paprika (smoked variety)
some peppadew peppers chopped
2 cloves garlic sliced
1 dried red chilli pepper chopped with scissor (courtesy of Scott who had grown and dried them)
1 tomato sliced
flat leaf parsley chopped
Par-boil potatoes for 5 mins then slice, in olive oil fry potatoes/peppers/garlic/chilli and dust with paprika, gently fry for 5 mins, whisk eggs (with salt n pepper) then add to frying pan, cook for 3-5 mins then drop on the sliced tomato and place under a grill until the omelette has puffed up and turned a light golden brown colour .... drop onto plate/board, sprinkle with parsley & pepper AND TUCK IN!!!!
My accompaniment was Pinot Noir and Rattlesnakes (the Lloyd Cole & the Commotions album).
Big enough for 2 but better for one :-)
