cider gravy the easy way...
fry an onion in butter until soft and slightly browned
add salt and pepper
add one and a half teaspoons of cornflower and mix well
add 500ml of cider, better cider better gravy
a decent pinch of stock powder
a blob of mustard, to taste, wholegrain - although if you can find honey mustard i would think that it would be pretty wonderful...
reduce it to the consistency that you would like
add a glug of brandy
reduce back down
if it's for pork then i would be tempted to add a blob of double cream, i made it for sausages.....which i just braised in the gravy as it thickened.
can't say that i would recommend the local chickens for this one though.
i hold my hands up and admit that i don't eat meat but regardless of that, i think, it should be a source of shame to society that any living creature is kept in such squalor...did someone once not say that we are judged by the way that we treat our animals? if not it's a good quote waiting to me made...
and just to add a splash of humour, the guy in the forefround is cleaning the windows of the block....just making certain that the inmates can see outside...
