Celebrating
We are so happy to be at home again; no planes, trains or automobiles today. Well, we did take a short trip out in one of the last mentioned to purchase some necessities. I have really missed not being able to cook this week, so I decided to make up for it today and create some new dishes. I concocted honey toasts topped with grilled goat's cheese and confit of onion to start (pic). For the main, I took giant prawns, which I de-headed, de-tailed, de-veined and butterflied. Then I set the prawn flesh aside and made fish stock with the debris (along with onion, vegetable stock, white wine and fines herbes). Then I fried some finely chopped chorizo, added the prawns and, when they were cooked pink, poured in some more white wine, the reduced fish stock and baby broad beans (pre-boiled for 5 mins). All finished off with a liberal amount of creme fraiche and served with boiled spaghetti (see extra). Linguine would have been be better, but I didn't have any. Served with a very cold white Gaillac, L'Infini. Oh, life is so fine and it's so good to be home.
