A Late Breakfast

School's out for Christmas, but C was back in for Art School today, so I had a rare day with just J at home. He had a haircut, got most of his holiday homework done, and we had a walk down to the Library and Supermarket. One of his homework tasks was to look at the importants of breakfast, and then write a recipe and make healthy breakfast dish. I'm not sure we'll have time for these tasty blueberry pancakes before he leaves at 7.30 for school in the morning, but we'll certainly be making them again.
