Smoking That Doesn't Damage Your Health

Stage 1 of my Christmas Eve meal ..Called at Rogacki, a superb fish shop where they also smoke fish to order .
I enjoy Haddock ( Schellfisch in German)  and plan Kedgeree as the main meal for Christmas Eve .No longer a meat eater this will be delicious . My order is in and here you see the man checking on some fish. The haddock will be in tomorrow .It will be smoked to perfection and ready at 3pm.
Few Germans eat Haddock smoked but he asked me for the recipe ..I wish the camera could also pick up and convey the aroma here as all ovens were on .
