Last Years Cake

Just thought I’d share this picture of last years Christmas cake that was only cut tonight - 15 months after the fruit cake was made. And even if I say so myself it tastes delicious! It just goes to show how well a good fruit cake will keep so long as you use good quality ingredients and feed it with a heavy slug or two of brandy. Amazingly it’s still as moist as when it was made - I assume the marzipan and icing gave it a good seal so that it didn’t dry out. Even the marzipan still tastes good and fresh but I did cut the icing off as I expect that will have gone stale.
