Kefalotyri....the iconic and oldest Greek cheese.....literally means 'head-cheese' because it's so hard. We bought this one on Sifnos from an old lady who had the cheese buried underground to aid its maturing......hence the rather dirty looking exterior! It's a mixture of sheep and goat's milk. It smells amazing........perfect on pasta!
