Please will you try one of my wild mushrooms?

These are actually pictured from a shop in Cockermouth. However, when we were in Northern Vermont two weeks ago an Italian couple visited us with a large box of porcini and oyster mushrooms which they had picked in the woods. We were very apprehensive about this gift but nevertheless, after reassurances and studying their two brilliant wild mushroom books we set to and produced a huge mushroom risotto! We loved it - and survived to tell the tale. But don't do this unless you truly have an expert on hand! - and they are also prepared to eat it!
