Salad days

I make this a lot as it's full of things which are good for me and it's absolutely delicious. Diced red pepper, diced green pepper, avocado, garlic, onion, prawns, organic extra virgin olive oil, himalayan pink salt, ground black pepper served on a bed of lettuce which isn't on the photo. It's then kept in the fridge for a couple of hours or can be eaten the next day.

I'm getting on better with most of the carers now which is good but I'm not able to relax as I never know if someone new is coming and I'll have to show them what to do.

So twice a day I sit waiting for the carers to come and go so that I can get on with my day, breakfast or evening meal. I can't seem to eat before 7 or 8 as that's when the carers call and prior to that I'm feeding mum hers.
We're supposed to have eaten by 6pm but I find myself rushing to get everything done for the carers visit and I don't want to rush my meal.
