Amandes

These are good looking croissants aux amandes in Mon Amour in Albert Park. It’s funny, despite the fact I know that they are split open to insert the almond paste I always feel funny about seeing the surgical cut. I think the first ones I ever saw were cunningly dealt with and the almond paste was inserted “laparoscopically” with a pasty nozzle.
